There’s something magical about a bowl of lemon chicken soup.
It’s comforting, it’s cozy, and when it’s done the Greek way—with eggs, lemon, and a silky broth—it’s downright soul-soothing. Traditionally, Avgolemono includes orzo or rice, which adds starch but not much nutrition. In this keto-friendly version, we ditch the carbs without losing the character.
Instead of orzo, we’re using cauliflower rice to keep the texture light and the carbs low. Bone broth amps up the nutrition with collagen and minerals, and the egg-lemon mix gives it that signature creamy finish—no dairy needed.

🍋 Keto Avgolemono Soup Recipe
Ingredients
- 1 tablespoon olive oil
- 1 medium shallot or leek, finely diced (lower carb than onion)
- 1 small carrot, finely diced (optional – omit for strict keto)
- 2–3 celery stalks, diced
- 2–3 garlic cloves, finely chopped
- 2 bay leaves
- 2 chicken breasts (about 12 oz / 350 g)
- 6 cups chicken bone broth
- 1½ cups cauliflower rice
- Juice of 1 lemon
- 2 egg yolks
- 1 tablespoon unsalted butter (optional)
- A handful of fresh dill, chopped
- Salt and freshly ground black pepper to taste
Instructions
- Sauté the shallot, carrot (if using), and celery in olive oil over medium heat for 5–7 minutes, until softened. Add garlic and cook for 1 minute.
- Simmer the chicken, bay leaves, and bone broth for 15 minutes or until the chicken is cooked through.
- Remove the chicken and bay leaves. Stir in the cauliflower rice and cook for 8–10 minutes.
- Shred the chicken and return to the pot.
- Temper the egg yolks and lemon juice with a ladle of hot broth, then stir the tempered mixture into the soup.
- Add dill and optional butter, stir to combine, and heat gently (do not boil) for 3–5 minutes.
- Season with salt and pepper, garnish with extra dill, and serve warm.
